The suckling pig is truly a great creation. This dish starts off as a 10 kg pig and we utilize every part of it. This
aspect of the dish is often overlooked in favor of more expensive or fancier products. However, we believe in
ingenuity at Kathleen’s 5, and that is exactly what we deliver in this dish.
The back loin gets wrapped in pancetta and very lightly seared to medium. The belly is poached in olive oil and
pressed for 8 hours before crisping the skin and serving with an acidic apple relish. Finally the legs and shoulders
are ground and mixed with spices for our delicious house-made chorizo style sausages. Every ingredient is
selected to guarantee quality.
